3 Easy Lunch Recipes

I love to throw together healthy meals, something about it just brings me joy especially when someone says to me “Courtney, I don’t have time,” something inside of me sparks and I go through a list of meal ideas and that person is always in awe! Making quick meals is just as easy as microwaving a lean cuisine, its just as easy as ordering something on an app and its even easier than going to pick up a to go order.

Now that I am working like a maniac, I truly need to learn to delegate more, anyone have any tips? I literally need QUICK, throw together recipes that satisfy my nutritional needs, give me a boost of energy and ZERO downfall through the day. I realized I had been making these frequently and since they are on my Jumpstart Program which I am totally doing right now to kick myself into high gear before I film my next workout series for The Fit and Fabulous Club,  I thought I should share them with you.

Healthy Lunch Recipe

Tuna Cakes

  • 1 can organic fresh water tuna
  • 2 tbsp. fresh salsa
  • 1 tbsp. fresh guacamole
  • 2 celery sticks diced
  • pink Himalayan sea salt, to taste
  • ground pepper. to taste
  • 1 lime squeezed
  • 2 brown rice cakes

Rinse and drain tuna (rinse twice) chop celery and measure out salsa and guacamole. Mix tuna celery, salsa, guacamole, sea salt and pepper. squeeze lime juice and stir. Set out brown rice cakes and put mixture on each one. Enjoy!

Teriyaki Bowl (Can be made Vegan)

  • 100-120 grams chicken breast//4 oz. firm organic tofu
  • 50 grams frozen green beans
  • 50 grams frozen broccoli
  • 100 grams riced cauliflower
  • handful of snap peas
  • handful of baby carrots
  • 2 tbsp. coconut teriyaki sauce

Put frozen vegetables in skillet and let them defrost. As this is happening prepare the other vegetables (wash them). add them until they become soft. once they are soft add in already cooked chicken or tofu. wait until everything is warm and add the teriyaki sauce and mix around until warm. Enjoy!

Tasty White Bean Salad (Vegan)

  • ½ cup white beans
  • ½ cup brown rice cooked
  • 1 tsp olive oil
  • 2 cups raw spinach
  • 1 cucumber
  • 4-5 asparagus spears
  • ½ cup mushrooms
  • 1/2 lemon
  • Himalayan sea salt to taste

Rinse and drain the beans, scoop out 1/2 cup brown rice. Chop cucumber, spinach and pre cooked mushrooms and asparagus spears. Mix in lemon, sea salt and olive oil. Add sea salt and lemon to taste!
