Something about Halloween makes me crave deliciously creamy chocolate. Not sure if its because as a child my favorite candy was Twix or the fact that I see photos of candy all day and chocolate soothes the soul. Whatever it is, I had to create a treat that I could nourish my body, be good for my health and hit that exact creamy chocolatey texture on the head.
If you have been reading my blog for awhile now, you know my love for my freezer chocolates recipe (grab that here) and if you have attended one of my workshops you are sure to have tasted them in action and probably have attempted making them a time or two. They are SO classic and the add ins and suggestions readers and clients have given me sparked this creation just in time for my favorite holiday.
My dearest friend Elise, of A Piece of Elise, whom you may remember gracing my blog awhile back (over here) gave me the most amazing ice cube tray which has pumpkin shaped moldings so I just had to get on it and create these magnificent little treats.
As much as I was dreaming of being Kira from Dark Crystal I ran out of time to create a costume! I might have to run out and pull something together and find a Halloween Party to crash as well! Ghoulish Chocolate Caramels Recipe
Get an ice cube tray ready, you can use a festive one or just any old ice cube tray will do:
- 1 Cup Pre-Soaked Dates
- 45 mL Organic Raw Honey
- 30 mL Peanut Butter
- 5 mL Himalayan Sea Salt
- 30 mL Coconut Oil
- 5 mL Stevia
Mix all of the ingredients together in a food processor and set aside.
Make the chocolates:
- 1 cup Coconut Oil
- 100 grams cocoa powder (the better the quality the better the taste)
- 1/4 cup Organic Raw Honey or Maple Syrup
Blend in food processor or blender.
Once you make the chocolates pour the chocolate into the mold and place the caramel in the middle and coat with chocolate. You must cover the entire outside with chocolate or else the caramel middle will not come out of the tray easily. Freeze overnight and enjoy with coconut flakes for the perfect party treat. Keep them cold!
