Peanut Butter Energy Balls Recipe

I love a snack that you can just pop into your mouth. I first had my eyes set on energy balls when Oh She Glows blogged them many moons ago and I used to swoon at the thought of one day owning a food processor so that I could recreate the magic! 3 years later and I now live in Bangkok, TH where dates can be quite pricey and I am trying to lower my sugar intake a wee bit (you can read more about that here), so I needed to recreate these magical balls so that I could enjoy them on the daily. I was gifted a food processor in the last 2 years and I am beyond obsessed and all of my vegan glory days can be brought back to life without the thought of mushing everything together by hand!

You may have seen these on my Instagram last week and I have been personally spending a lot more time, a bit too much time, in my kitchen trying to recreate another flavor of these magical little balls. I feel so weird saying balls throughout this post but I am unsure of what else to call them. I gifted some to my friend Elise (check out her blog here) and we had a kick calling them balls..ok enough with the balls, this is how you make and enjoy these sweet balls of goodness..

Peanut Butter Energy Balls Recipe

  • 1 cup coconut flour
  • 2/3 cup unsweetened coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup cacao nibs or dairy free chocolate chips
  • 15 mL coconut oil
  • 15 mL almond or coconut milk
  • stevia to taste
  • cinnamon to taste

Place ingredients in food processor and blend until smooth. Wet hands (critical step) and roll into 12-18 balls on parchment paper and place in the fridge. Let sit in the fridge for at least 30 minutes and enjoy 🙂 I rolled the in unsweetened coconut flakes to make them less sticky.

Peanut Butter Energy Balls No Dates

Make sure to store them in the fridge and share these little delights with friends and family. If you have loved ones in the house this makes for a perfect snack to set out around 4 PM when hunger strikes!
