Donut or Doughnut? Depends on who you ask but to me these beauties are a true delight and have stopped me from one or twenty sugar comas. To be honest with you all, I have had maybe two donuts in the last six years and after each one I always felt extremely nauseous, sick and experienced a bad stomach ache for a few days after the fact..but not with these healthy bites!

The very first batch I made turned out delicious, I just needed to work on my topping skills a bit more + also wanted to try a cinnamon twist version since I love to balance out my blood sugar with lots of cinnamon everyday!

So then I bought some cute sprinkles, googled some ways to make my own chocolate using raw cacao powder without it tasting bitter + I went to town..

Healthy Donut Recipe

3/4 cup Coconut Flour (bought from Paleo Robbie)

2 Organic Free Range Eggs

2 Tbsp. Coconut Oil (Cold Pressed, Organic)

3 Tbsp. Organic Maple Syrup

1 Tsp. Cinnamon

1 Tsp. Apple Cider Vinegar (Paleo Robbie)

1/4 Tsp. Baking Soda

How to Make:

Line your donut tray with coconut oil. Preheat oven to 176. Beat eggs until foamy. Mix wet ingredients and dry separately. Pour dry into wet ingredients and stir until doughy. Take a spoon and spoon mixture into tray. Place in oven for 15-20 minutes. Dance around and dream of ways to make your donuts sparkle..

While baking get toppings ready: Think Almond Slices, Cinnamon, Sprinkles, Coconut Shreds..it is endless!

Once the donuts are done, flip them out of the tray and go to town!

I used to LOVE baking and used to bake almost every week but after moving to Bangkok I kind of lost it that is until I discovered that I just need to get more creative with the ingredients I do have available to me!
