With an abundance of coconut in Thailand my love for them grew in more ways than one. Before moving here I had the coconut oil code down, it was a staple in my kitchen and one of my many beauty oils in my bathroom. After trying pure full fat coconut milk for the first time and enjoying the meat soaked in coconut water after a walk around the park, I am a full blown fan of this superfood.
The holidays give me more time to bake and create in the kitchen so I knew combining my love of coconut, protein fav eggs and some manuka honey (gift from the fabulous Paleo Robbie) I could create a little crumble power macaroon that would cure my sweet cravings and give me a super food boost I need during this time of year. If you have been reading Star Systemz for awhile you know how much I love a simple recipe, nothing complicated and no special equipment needed so that is exactly what these bad boys are, simple and foodgasm packed!
Coconut Macaroons Recipe
♥1/2 cup manuka honey
♥2 cups shredded unbleached, unsweetened coconut
Mix all of these ingredients together. Line a pan with parchment paper. Wet your hands and roll into balls and stick onto sheet. Bake at 176 C for 10 minutes or until browned. Let cool down and enjoy ♥
I added Chocolate Stevia Syrup which I got off of Iherb, honestly I put this stuff in everything coffee, smoothies, egg white pancakes…you name it, its probably got Chocolate Stevia Syrup all over it. (BE sure to use code LDZ954 to get a discount)
